The Darnitskiy is produced from a mixture of rye peeled wheat and wheat flour of the first grade and other raw materials by baking and molding in accordance with GOST 26983-86.
The weight of one product in accordance with GOST 26983-86 should be 500 grams-1.250 grams.
After baking at the end of the maximum period of exposure at the plant (up to 14 hours), the permissible deviation of the weight of 1 finished product in the lower side should not exceed 3%, or 2.5% for the average weight of 10 items.
The acceptable period for the sale of Darnytsia bread in the retail chain after the removal of the finished products from the oven is 36 hours.
The acidity of the crumb of the finished product should not exceed 8 degrees.
The moisture content of the crumb is no more than 47% (for the hearth) and not more than 48.5% (for the molded).
The porosity of the crumb is not less than 57% (for the hearth) and not more than 59% (for the molded).
Features of baking Darnytsia Bread
1.Preparation of raw materials is carried out in accordance with the adopted procedure.
2. The dough is prepared on thick, liquid without brewing, liquid with brewing or concentrated lactic ferments.
3. The readiness of the test is determined by the organoleptic method or by the level of acidity.
The finished dough is cut into billets, which are placed in molds or on baking sheets and sent to a dosing chamber for 45-60 minutes.
Optimum conditions for proofing the test pieces: humidity - 85%, temperature - 35-40 о С.
Duration of baking:
- for forming blanks 0.9 kg - 55-57 min;
- for semi-finished workpieces with a mass of 0.9 kg - 50-52 min.
The temperature of baking in a humidified baking chamber is 200-240 o C.
Before taking the bread out of the oven, it is recommended to sprinkle with water.
